In our usability tests we're finding the "Basket -Summary" page in between step 1 and 2 a little confusing. That's the page where you need to clicck "Continue" or add another room I see in TourCMS…Continue

Yes, that would be one way to go.
You could either do this on a per customer or per booking basis. I'm going to presume per booking as your terms and conditions may presumably change over time.
